My first job was Sbarro's Pizza in the mall at 15 years old! I then went on to be a butcher's counter help and High School and I had a butcher recognize my hard work and he took me back and I started training to be a butcher. From there I moved on and worked at various restaurants and the ability to cut meat help me Excel and move forward

Also watching my aunt Pat as a young boy cook really she was one of my role models growing up. As we get close to Thanksgiving one of my Fondest Memories of food was my aunt Pat flaming a pork roast with brandy while the kids got to throw cinnamon through it and watch it Sparkle.

One year she lit her table clothe on fire, she put it out with a platter and everyone had a laugh. She just loved it and boy was that pork roast the best. I admired how her food was great and she didn't think twice about the fire! #coolchef

I couldn't agree more. Using the whole animal is lost in the American culture. We tend to buy our prepackaged meat and forget about the animal as a whole.

I took the job at Casa Pacifica 3 years ago. We are a shelter for children. Many live there for multiple years and I get the pleasure of nourishing their bodies while clinicians work with there heart and brains.

I have since started working as a chef instructor for the youth at casa. I started a vocational program for the kids transitioning out of casa as young adults.

World Central Kitchen came to us at Casa Pacifica the day after the fire the Woolsey fire started and of course the tragic shooting in Thousand Oaks. Casa was amazing to open their doors so we could cook on this platform and help those who are helping us. World Central Kitchen and Casa Pacifica truly are amazing programs that affect the world every day.

Developing the culinary program at Casa Pacifica has truly been amazing and life-changing. I'm proud to be a mentor and seening some of these kids at the restaurant the work in makes me feel proud and amazed at their success when some had treated them so badly and even given up on these amazing kiddos. Any one can cook, right! I do have a line of salad dressings that I have been toying around with bottling so I hope to get that venture off soon!
